Nigerian chicken pepper soup recipe
Nigerian chicken pepper soup is not only delicious but it is also versatile. You can serve it as an appetizer or as a main dish. This means you can start with it while waiting for the main dish, or serve it with white rice, yam or plantain as the main dish itself.
Nigerian chicken pepper soup is spicy easy to prepare. All you have to do is get the right local spices for your soup and follow these simple steps below.
This dish is great for all kinds of parties and when you want a change from your usual Sunday Jollof rice. You can serve it when you have friends over and everyone is waiting for you to break out the main dish. Also, chicken pepper soup is a staple in bars all over Nigeria because it goes well with a lot of drinks.
• 1 whole chicken
You can use old layers or broilers for your Nigerian chicken pepper soup. But remember that the cooking time for old layers will be longer than that for broilers.
• 3 fresh habanero peppers, blended
Habanero pepper adds an exciting fresh taste to you Nigerian chicken pepper soup. You can use either red of yellow peppers.
• 1 tablespoon chili pepper, ground
Your soup is supposed to be spicy, and the chili pepper is both an extra layer of spiciness and taste. You can add more chili as desired, depending on how hot you want your soup.
• 1 large onion, blended
You should blend your onions with the habanero pepper to make your soup extra flavourful.
• 2 seasoning cubes
As much as you can use any seasoning cube of your choice, your food will be tastier if you choose chicken-flavoured seasoning cubes so you don’t reduce the chicken flavor of your soup.
• A handful of curry leaves, chopped
Curry leaves add aroma and extra spice to your soup. It is okay to substitute curry leaves with scent leaves. Please note that scent leaves have heavier taste and smell, and you will want to reduce the quantity you use in your soup.
• 3 cloves garlic, crushed
• 1 medium ginger
• 1 tablespoon curry powder
Step 1 – blending the spices
Make a spice mix by blending together habanero peppers, onion, garlic, and ginger
Set the spice mix aside.
Step 2 – chicken prep
Cut the chicken into chunks
In a pot, combine chicken with spice mix, chili pepper, curry powder, seasoning cubes and a teaspoon of salt, stirring until well-blended
(At this point you can leave the chicken in the refrigerator overnight to absorb the spices. However, if you want to cook it straight away, then you can proceed to the other steps.)
Pour in just enough water to cover the chicken and cook on low heat
Watch the pot and top up water as needed so the soup doesn’t dry off before the meat is done
Cook until chicken is tender
Add curry leaves and cook for additional two minutes
Serve your Nigerian chicken soup steaming hot
